Baked Eggplant with Tomato Chutney

(recipe from Eat Up Slim Down 2010, Prevention Magazine)

1 medium eggplant
2 Tbsp. olive oil, divided (I used coconut oil)
1/4 tsp. salt
1/4 tsp. black pepper
1 onion, chopped
1 clove garlic, chopped
1/4 cup balsamic vinegar
1 Tbsp. chopped fresh basil, or 1 tsp. dried basil
1 can (14.5 oz.) diced tomatoes
1/4 cup pine nuts (I used walnuts)

Preheat the oven to 425F.  Coat a 13" x 9" baking dish with cooking spray.  Cut the eggplant into 1/2" slices and brush with 1 tsp. of the oil.  Sprinkle each side with salt and pepper; lay the slices in the baking dish.  Bake for 30 minutes or until the eggplant is tender.

Heat the remaining oil in a nonstick saucepan over medium-high heat.  Cook the onion and garlic for 3 minutes, stirring, until softened.  Add the vinegar and basil and cook, stirring, for 1 minute.  Add the tomatoes and simmer for 5 minutes.  Remove from the heat and stir in the pine nuts.  Spoon over the eggplant and bake for 10 minutes.

Crisp Arugula Salad

(recipe from Christina Cooks)

1/4 cup extra virgin olive oil
1/2 tsp. sea salt
1/4 tsp. cracked black pepper
2 tsp. fresh lemon juice

2 cups baby arugula
10-12 strawberries, hulled and quartered
1/2 cup pine nuts
1/2 cup raisins (I used currants)

Combine dressing ingredients in the bottom of your salad bowl.  Add greens, fruit, nuts, raisins and toss to coat ingredients with dressing.

*You may use berries, pear or apple slices, tangerines, unsweetened dried cranberries, hazelnuts, walnuts or almonds.  You can change the salad completely by adding cherry tomatoes and cucumbers or olives and leaving out the fruit.

(Basic, simple, delicious.)

Roasted Cauliflower with Dates and Pine Nuts

(recipe from 5 Ingredient Fix cookbook)

1 large head cauliflower, cut into florets (about 8 cups)
Kosher salt and freshly cracked black pepper, to taste
4 Tbsp. unsalted butter (I used coconut oil)
1/3 cup pine nuts
1 garlic clove, minced
1/2 cup pitted Medjool dates, coarsely chopped

Preheat the oven to 425F.

Evenly spread the cauliflower on a baking sheet and season with salt and pepper.  Transfer to the oven and roast, tossing once with a spatula, until golden brown at the edges, about 20 minutes.

Put the butter in a small skillet over medium-low heat.  Once it's melted, add the pine nuts and cook, stirring frequently, until they're light golden brown, about 5 minutes.  Add the garlic and dates and continue cooking until the garlic and dates are softened, 2 to 3 minutes more; season with salt.

Transfer the hot cauliflower to a serving bowl, drizzle the pine nut mixture over the top, and toss to combine.  Taste and adjust seasoning if necessary and serve warm or at room temperature.

(Interesting cauliflower dish - simple and tasty.)

Arugula Salad with Delicata, Pomegranate, and Pine Nuts

(recipe from fiveandspice.com)

1 medium-size delicata squash (if you can't find delicata, you can sub a different winter squash: just peel it and cut it into chunks)
4 generous handfuls of arugula
a generous 1/4 cup pine nuts
the arils from 1/2 of a pomegranate (about 1/2 cup)
a pungent, hard cheese (like Parmesan or an aged goat cheese) for shaving (I left out the cheese)
2 Tbsp. fresh squeezed lemon juice
3 Tbsp. olive oil
a pinch of salt
2 tsp. maple syrup

Heat your oven to 425F.  Wash and halve the delicata squash lengthwise and use a spoon to scrape out the seeds.  Cut each squash half into lots of little moons, a bit over a quarter-inch thick.  Toss them with some olive oil and salt and spread them in a single layer on a baking sheet.  Bake, flipping halfway through, until they are caramelized and tender, about 20 minutes.

While the squash is roasting, put the pine nuts in a separate baking dish and pop them in the oven for just about 5-8 minutes, until they are golden and fragrant.

Let both the squash and pine nuts cool for a little bit, until slightly warm.

While they are cooling, whisk together the lemon juice, olive oil, maple syrup, and pinch of salt.  Then toss the squash with about 1/3 of this dressing.

In a large salad bowl or serving platter, combine the arugula with the squash and pomegranate.  Add more dressing to taste and toss.  Then, add the pine nuts.  Use a vegetable peeler to shave pieces of cheese over the top of the salad - however much you want to use.  Toss again gently, and serve.

(Excellent salad combination!)

Harissa Spaghetti

(recipe from 101cookbooks.com)

3 medium cloves garlic, peeled
a big pinch of fine grain sea salt
1/4 cup olive oil
2 Tbsp. harissa paste

8 oz. (1/2 lb) spaghetti (I used a quinoa/corn/amaranth pasta, since I'm trying not to do wheat)
1 small bunch kale, washed, deveined, and cut into bite-sized pieces
1/2 cup oil-cured black olives, pitted (I also cut these into quarters)
1/2 cup pine nuts, toasted
zest of 1 lemon

Bring a big pot of water to a boil.  In the meantime, place the cloves of garlic on a cutting board and sprinkle them with a big pinch of salt.  Crush with the flat side of a knife.  Now crush and chop, crush and chop until you have a garlic paste.  Alternately, you can use a mortar and pestle.  In a small bowl, whisk together the garlic paste, harissa, and olive oil.  Set aside.

Generously salt the boiling water, add the pasta, and cook per package instructions.  Just before the pasta is done, add the kale to the pasta water, count to six, drain and set aside.

Heat half of the harissa dressing in the now empty pasta pot.  Add the pasta and kale, black olives, pine nuts, and lemon zest.  Stir over the heat for a minute or so, then turn everything out onto a platter and drizzle with the remaining harissa olive oil.  (I just stirred all of the harissa olive oil into the pot along with the other ingredients.)

(Amazing.  At first, it seemed a bit too salty, but after a day (I split this up for lunches over many days) the flavors blended into an amazing spicy yummy dish.  So good.  And with that, I finally used all of my small can of harissa!  Yay!  What a culinary adventure!)

Hearty Morning Cereal

(recipe from Yoga Living)

1/2 cup amaranth
1/2 cup millet
1/2 cup brown rice
1/2 cup pine nuts
1/2 cup almonds
1/2 cup sunflower seeds
1/2 cup pumpkin seeds

Lightly toast all of the above ingredients in a dry skillet.  Toast only until a distinct nutty aroma is apparent. Allow cooling.  Grind all ingredients in a food processor, until fine.  Keep mixture in the refrigerator or freezer.

Cook 1/2 cup of the ground cereal with 1 cup milk or water in a small pan over medium heat.  Cook until thick.  Stir frequently to avoid burning.

(I found that this does not cook terribly quickly, and that you may need to add more mixture to the milk till your preferred thickness.  Tastes good, though.  I added some chopped prunes and maple syrup on top.)
