Roasted Lemon Cauliflower with Walnuts

(recipe from Amazing Grass)

1 large head cauliflower, cut into small florets
2 Tbsp. coconut oil
Juice of 1 large lemon
Large pinch cayenne pepper
2 Tbsp. finely chopped fresh parsley
2 Tbsp. finely chopped red onion
3 Tbsp. chopped raw walnuts
Salt and pepper, to taste

Preheat the oven to 450F.  Toss the cauliflower with the coconut oil, lemon juice, and cayenne and bake on a baking pan for 30 minutes.  Stir in the parsley and onion.  Season to taste with salt and pepper and serve topped with the walnuts.
