(recipe from Real Simple magazine)
2 yellow or orange tomatoes, coarsely chopped
1 small white onion, minced
Juice of 1 lime
2 Tbsp. chopped fresh cilantro
1/2 tsp. salt
Dash of cayenne pepper
Add all of the ingredients to a medium bowl. Toss to combine. Spoon into a serving dish and set aside for 15 minutes to blend flavors.
